STORY
Nino Meris is a woman owned and operated vineyard and celler located in Kakheti.
Nino and her mother produced a Saperavi 2020 vintage made in qvevri, according to the traditional Georgian method.
The wine-making process involves pressing the grapes and then pouring the juice, grape skins, stems, and pips into the qvevri, which is sealed and buried in the ground. They typically use all or partial skins and stems, to three-quarters of the vessel’s capacity.
The grapes were kept in qvevri on skin contact for one 1 month.
Fermentation takes place without intervention, using naturally occurring yeasts and natural (underground) temperature control.
The 2020 vintage was bottled in May 2021.
Production capacity is 1000 liters in qvevri.
Nino commented, “I am proud to call myself a Georgian woman winemaker. Only I and my mother care about wines with no man entering the wine cellar during the winemaking process.”
